This homemade apple turnover recipe features buttery puff pastry filled with tender, cinnamon-spiced apples and topped with a sweet glaze. Perfect for breakfast, dessert, or a cozy fall treat, these turnovers are easy to make and bake to golden perfection in just minutes

Ingredients

For the Turnovers

  • 1 lb puff pastry (2 sheets), thawed according to package instructions
  • 1 Tbsp all-purpose flour (for dusting)
  • 1 1/4 lbs Granny Smith apples (about 3 medium), peeled, cored, and diced into 1/3-inch pieces
  • 1 Tbsp unsalted butter
  • 1/4 cup brown sugar, lightly packed
  • 1/2 tsp ground cinnamon
  • 1/8 tsp salt
  • 1 egg + 1 Tbsp water (for egg wash)

For the Glaze

  • 1/2 cup powdered sugar
  • 1–2 Tbsp heavy whipping cream

Instructions

1. Preheat Oven and Prepare Pastry

Preheat oven to 400°F (200°C). Remove puff pastry from the freezer and thaw according to package directions while you prepare the filling.

2. Make the Apple Filling

In a medium saucepan over medium heat, melt the butter. Add diced apples and cook, stirring occasionally, for about 5 minutes until slightly softened.
Reduce the heat to low, then stir in brown sugar, cinnamon, and salt. Simmer for 3 minutes, stirring occasionally, until apples are tender and caramelized. Remove from heat and let the filling cool completely.

3. Roll and Cut Pastry

On a lightly floured surface, roll the first sheet of thawed puff pastry into an 11-inch square. Using a pizza cutter, slice into 4 equal squares.

4. Fill and Seal Turnovers

Spoon cooled apple filling onto one half of each square, leaving at least a 1/2-inch border. Beat the egg and water together to make the egg wash. Brush the edges lightly with egg wash, fold the pastry over to form a triangle, and press edges with a fork to seal. Repeat with the second puff pastry sheet to make 8 turnovers.

5. Bake

Arrange turnovers on a parchment-lined baking sheet, spacing them at least 1 inch apart. Cut 2–3 small slits in the tops with a paring knife to allow steam to escape. Brush the tops with egg wash. Bake for 20–23 minutes, or until golden brown and puffed.

6. Glaze and Serve

While still warm, whisk together powdered sugar and heavy cream until smooth, adjusting the cream amount for desired consistency. Drizzle over turnovers before serving.

Tips

  • Let the apple filling cool before filling pastries to prevent soggy dough.
  • Cut small slits in the tops to help steam escape and maintain a crisp crust.
  • Use a sharp knife or pizza cutter for clean pastry edges.
  • Keep puff pastry cold for best puff and texture.

Variations and Substitutions

  • Fruit Swaps: Replace apples with pears, peaches, or berries.
  • Spice It Up: Add a pinch of nutmeg, cardamom, or allspice to the filling.
  • Dairy-Free: Use dairy-free butter and coconut cream for the glaze.
  • Savory Option: Skip the sugar and fill with cheese, mushrooms, or spinach.
