Instructions

Soak the Beans (Two Methods):

Method 1:

  1. Place the beans in a large bowl and cover with 2 inches of cold water.
  2. Soak for 8-12 hours, then drain and rinse.

Method 2:

  1. Place the beans in a large pot and cover with 1 inch of water.
  2. Bring to a boil, then remove from heat.
  3. Let soak for 1 hour, then drain and rinse.

Assemble and Cook:

  1. In a medium saucepan over medium heat, combine chicken broth, water, ketchup, brown sugar, molasses, Worcestershire sauce, hot sauce, and seasonings. Stir until well combined. Remove from heat.
  2. Cut the bacon strips in half. Place 4 halves at the bottom of the slow cooker.
  3. Layer half of the drained beans over the bacon, then sprinkle diced onions on top.
  4. Add the remaining beans and pour the prepared liquid mixture over them. Ensure the liquid just covers the beans; add a little more water if needed.
  5. Arrange the remaining 4 bacon halves on top.
  6. Cook on low for 8 hours.

Final Steps:

  1. Remove the bacon pieces from the top of the beans. Roughly chop them and stir back into the beans. Optionally, retrieve the bacon from the bottom and stir it in as well.

Thicken the Sauce:

  1. In a small container, mix 2 tablespoons cornstarch with 2 tablespoons cold water. Cover and shake until combined.
  2. Stir the slurry into the beans. Add up to 3/4 cup water if more liquid is desired.
