Create a flavorful Caprese pasta dish combining tender chicken, creamy mozzarella, fresh cherry tomatoes, and aromatic basil in a rich and velvety sauce. This recipe is perfect for a quick and satisfying weeknight dinner or a special gathering. Simple ingredients and easy preparation make it a versatile favorite for pasta lovers.

Ingredients

Chicken

  • 1 large boneless skinless chicken breast
  • 2 tsp Italian seasoning
  • Salt/Pepper, to taste
  • 1/3 cup flour
  • 1–2 tbsp olive oil

Pasta and Sauce

  • 1/2 cup dry white wine (see notes)
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 2 tbsp flour
  • 1 tbsp tomato paste
  • 1 1/4 cups half and half (equal parts cream and milk)
  • 3/4 cup chicken broth
  • 1/2 cup Parmesan cheese, grated
  • 1 cup cherry tomatoes, halved
  • 5 oz. fresh mozzarella, cut into cubes (see notes)
  • 1/2 lb. penne pasta

Seasonings

  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1 tsp onion powder
  • 1/2 tsp mustard powder

For Serving

  • Fresh basil (whole leaves or chiffonade)
  • Balsamic glaze (optional)

Instructions

Prep Work

  1. Combine the half and half, chicken broth, and seasonings in a measuring cup. Set aside.
  2. Measure all other ingredients before starting for a smooth cooking process.

Cook the Chicken

  1. Slice the chicken in half lengthwise to create thinner pieces. Pat dry and season both sides with Italian seasoning, salt, and pepper.
  2. Dredge the chicken in flour, shaking off the excess.
  3. Heat olive oil in a skillet over medium-high heat. Cook the chicken for 4–5 minutes per side, until golden brown and fully cooked.
  4. Set the chicken aside to rest for 10 minutes, then slice into strips. Optionally, drizzle with balsamic glaze for extra flavor.

Make the Sauce

  1. Using the same skillet, add the white wine over medium heat. Simmer for 3 minutes, scraping up any browned bits from the pan for extra flavor.
  2. Add the butter and minced garlic. Cook for 1 minute, then stir in the flour. Let it cook for 1–2 minutes to remove the raw flour taste.
  3. Mix in the tomato paste, followed by the combined half and half mixture, adding it gradually while stirring continuously.
  4. Bring the sauce to a gentle boil, then lower the heat to a simmer.

Cook the Pasta

  1. Boil the pasta in salted water until al dente, following package instructions. Drain and set aside.

Assemble the Dish

  1. Slowly stir the Parmesan cheese into the sauce until melted. Add the cherry tomatoes and mozzarella cubes, stirring gently to distribute.
  2. Mix in the cooked pasta, ensuring it’s evenly coated with sauce. Add the sliced chicken, stirring to warm everything through.
  3. Garnish with fresh basil and serve immediately.

Tips

  • Use fresh mozzarella for the best texture and flavor.
  • Salt the pasta water generously—it’s your only chance to season the pasta itself.
  • Cook the sauce over low heat after adding the cream to prevent curdling.

Variations and Substitutions

  • Replace chicken with shrimp, tofu, or omit for a vegetarian version.
  • Use vegetable broth instead of chicken broth for a lighter option.
  • Substitute grape tomatoes for cherry tomatoes if needed.

FAQs

Can I make this recipe ahead of time?
It’s best enjoyed fresh, but you can prepare the sauce and chicken in advance. Reheat gently and add freshly cooked pasta before serving.

What wine should I use?
A dry white wine like Sauvignon Blanc or Pinot Grigio works best. Substitute with chicken broth if avoiding alcohol.

How do I prevent the sauce from breaking?
Keep the heat low after adding the cream and stir continuously for a smooth texture.

Serving

  • Serve with crusty garlic bread or a fresh green salad.
  • Pair with a light, crisp white wine for a complete dining experience.

Suggestions

  • Drizzle balsamic glaze over the finished dish for added depth and tanginess.
  • Garnish with extra Parmesan and a sprinkle of red pepper flakes for a touch of heat.
  • Double the recipe for meal prep—it reheats beautifully for lunch or dinner the next day.
