Prepare a flavorful Chicken Lo Mein dish with tender chicken, fresh stir-fry vegetables, and perfectly seasoned noodles coated in a savory homemade sauce. This easy-to-make recipe is perfect for busy weeknights or as a crowd-pleasing dinner. Customize it with your choice of vegetables and protein, and create a restaurant-quality meal at home in under 30 minutes. Packed with bold flavors and simple ingredients, this is a go-to option for fans of classic Asian-inspired dishes.

Ingredients

Stir Fry

  • 2 small boneless, skinless chicken breasts (about 1 lb.)
  • Salt and pepper, to taste
  • 2 tablespoons peanut oil (or substitute with olive oil as needed)
  • ¼ cup dry white wine (see notes)
  • 2 ½ cups mixed stir-fry vegetables (see notes)
  • 10 oz. lo mein noodles (see notes)

Sauce

  • 1 cup chicken broth
  • ¾ cup beef broth (see notes)
  • ¼ cup soy sauce
  • 1 tablespoon brown sugar (or substitute with honey)
  • 2 tablespoons cornstarch
  • 3 cloves garlic, minced
  • 1 teaspoon hot sauce (Frank’s or Sriracha)
  • ¼ teaspoon toasted sesame oil
  • ¼ teaspoon ground ginger
  • 1 pinch red pepper flakes (optional)

Instructions

Prep Work

  1. In a large measuring cup or bowl, combine all sauce ingredients. Stir until well blended and set aside. Reserve ¼ cup of the sauce in a separate medium bowl.
  2. Optional: Cover chicken with plastic wrap and tenderize using a meat mallet.
  3. Pat chicken dry with paper towels, season with salt and pepper, and cut into bite-sized pieces.
  4. Add chicken to the reserved ¼ cup sauce. Toss to coat and let marinate while you prepare the vegetables and boil salted water for the noodles.

Make the Stir Fry

  1. Heat oil in a large skillet over medium-high heat. Add the chicken and sear for about 3 minutes without stirring. Flip and cook for another 2-3 minutes, until golden and cooked through. Remove and set aside.
  2. Pour wine into the same skillet, scraping the bottom and sides with a spatula to deglaze the pan. Simmer for about 2 minutes until the liquid reduces by half.
  3. Meanwhile, cook the lo mein noodles in boiling water for 1 minute less than the package recommends for al dente. Drain and set aside.
  4. Add vegetables to the skillet, adding more oil if necessary, and sauté for about 3 minutes until slightly softened. Stir in the sauce and bring to a boil, then reduce heat to low.
  5. Gradually add cooked lo mein noodles to the skillet, tossing with tongs to combine. Use as much or as little of the noodles as needed to achieve your preferred noodle-to-sauce ratio. Note: Noodles will absorb more sauce as they sit.
  6. Return chicken to the skillet and toss to coat in the sauce. Heat through for 1-2 minutes.
  7. Garnish with toppings of your choice (see notes) and serve hot.
