Crispy Beef Tacos (Baked, Not Fried!)

These oven-baked tacos are perfectly crispy on the outside and packed with flavorful, cheesy beef filling on the inside. They’re an easy weeknight dinner or crowd-pleasing party favorite all without the mess of frying!


Ingredients

For the Tacos

  • Oil (canola, vegetable, or olive oil)
  • 1 lb ground beef (85/15 or 90/10 lean-to-fat ratio)
  • 2 Tbsp taco seasoning (store-bought or homemade)
  • ½ cup water
  • 3 cloves garlic, minced
  • 1 lime, juiced
  • 1 (4 oz) can diced green chiles
  • Salt and pepper, to taste
  • 8 oz Colby Jack cheese, shredded, divided
  • 8–10 (6-inch) white or yellow corn tortillas

For the Chipotle Crema

  • ½–¾ cup Mexican crema or sour cream
  • 2 chipotle peppers in adobo sauce
  • 1 tsp honey or sugar
  • ½ lime, juiced
  • 1 clove garlic
  • Salt, to taste

For Serving

  • Sour cream
  • Finely shredded lettuce
  • Fresh cilantro
  • Pico de gallo
  • Guacamole
  • Pickled red onions (optional)

Instructions

  1. Preheat the oven:
    Heat oven to 425°F (220°C). Lightly oil or spray two baking sheets with nonstick spray and set aside.
  2. Cook the beef:
    In a medium skillet over medium heat, add 1 tablespoon of oil. Add the ground beef and cook until no longer pink. Drain any excess fat.
  3. Season the beef:
    Return the skillet to the burner and stir in taco seasoning, water, minced garlic, lime juice, diced green chiles, and a pinch of salt and pepper.
    Cook for about 5 minutes, stirring occasionally, until most of the liquid has evaporated.
  4. Add cheese:
    Stir in 1 cup of shredded Colby Jack cheese until melted and well combined. Remove from heat.
  5. Warm the tortillas:
    Wrap the tortillas in a slightly damp paper towel and microwave for 45–60 seconds, flipping halfway through, until pliable.
    If they still feel stiff, warm again for an additional 10 seconds.
  6. Assemble the tacos:
    Working one tortilla at a time, spread about ¼ cup of the beef mixture over one half of the tortilla.
    Sprinkle with a little extra shredded cheese and fold the tortilla in half.
    Lightly brush the top with a small amount of oil.
  7. Bake:
    Arrange the folded tacos on the prepared baking sheet (about 6 per sheet).
    Bake for 15–20 minutes, until crispy and golden — no flipping required!
  8. Make the chipotle crema:
    While the tacos bake, combine crema (or sour cream), chipotle peppers, honey, lime juice, garlic, and salt in a food processor or blender.
    Blend until smooth and creamy. Taste and adjust seasoning if needed.
  9. Serve:
    Drizzle or serve the chipotle crema on the side. Add your favorite toppings such as lettuce, cilantro, pico de gallo, or guacamole.
