Tender, juicy, and full of flavor these Crock Pot Teriyaki Steak Bites are a delicious, fuss-free dinner option that tastes just like takeout! Slow-cooked in a sweet and savory teriyaki sauce with hints of garlic, ginger, and pineapple, this dish is perfect over rice or alongside your favorite vegetables.

Ingredients

For the Steak

  • 3 lb sirloin steak, stew meat, filet mignon, round steak, chuck roast, or flat iron steak

For the Sauce

  • 1 cup pineapple juice
  • ½ cup soy sauce
  • ½–1 cup brown sugar (use 1 cup for a sweeter sauce)
  • 2 tbsp minced garlic
  • 2 tbsp apple cider vinegar or rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp freshly minced ginger
  • ½ tsp black pepper

To Thicken the Sauce

  • 2 tbsp cornstarch
  • ¼ cup cold water

For Garnish

  • Sliced green onions
  • Sesame seeds

Instructions

  1. Prepare the Meat
Take the steak out of the refrigerator about 30 minutes before cooking to bring it closer to room temperature. Cut into bite-sized pieces and set aside.
  2. Make the Sauce
In a medium bowl or large measuring cup, whisk together the pineapple juice, soy sauce, brown sugar, garlic, vinegar, sesame oil, ginger, and black pepper. Set aside.
  3. Assemble the Crock Pot
Place the steak pieces in the bottom of your slow cooker. Pour the teriyaki sauce mixture evenly over the top, making sure all the meat is coated.
  4. Slow Cook
Cover with the lid and cook on LOW for 6–7 hours (or on HIGH for about 3½–4 hours) until the steak is tender and flavorful.
  5. Thicken the Sauce (Optional but Recommended)
Once the steak is done, remove the meat from the crock pot using a slotted spoon.
Carefully pour the remaining sauce through a fine mesh sieve into a small saucepan. Bring to a simmer over medium heat.
In a small bowl, whisk together cornstarch and cold water, then slowly whisk this slurry into the sauce. Continue cooking until thickened to your liking.
Taste and adjust seasoning if needed.
  6. Serve
Return the steak bites to the thickened sauce and toss to coat. Garnish with sliced green onions and sesame seeds. Serve hot over rice with a side of broccoli, asparagus, or a crisp green salad.

Why You’ll Love This Recipe

  • Super easy — your slow cooker does all the work!
  • Tender, melt-in-your-mouth steak with bold teriyaki flavor.
  • Perfect balance of sweet, salty, and umami.
  • Family-friendly and meal-prep friendly.
  • Versatile — serve with rice, noodles, or veggies.

Tips

  • Choose the right cut: Sirloin or chuck roast are the best for tenderness and flavor.
  • Trim excess fat: Helps the sauce stay rich without being greasy.
  • Sweetness level: Start with ½ cup brown sugar and add more to taste if you prefer it sweeter.
  • Thicken at the end: Don’t skip the cornstarch step for that glossy, restaurant-style sauce.
  • Add veggies: You can toss in bell peppers, onions, or broccoli during the last hour of cooking.

Variations and Substitutions

  • Protein swap: Try this recipe with chicken thighs, pork tenderloin, or even tofu.
  • Low-sodium: Use low-sodium soy sauce to control saltiness.
  • No pineapple juice? Substitute with orange juice or apple juice for a fruity twist.
  • Spicy version: Add red pepper flakes or a drizzle of sriracha to the sauce.
  • Gluten-free: Use tamari or coconut aminos instead of soy sauce.

FAQs

Can I use frozen meat?
It’s best to thaw the meat first for even cooking, but you can cook from frozen by adding 1–2 extra hours on LOW.

Do I need to sear the meat first?
No, but you can sear it briefly in a hot pan for added flavor before adding it to the slow cooker.

Can I make this ahead of time?
Yes! Store leftovers in an airtight container in the fridge for up to 4 days. Reheat gently on the stove or in the microwave.

Can I cook it on HIGH instead?
Yes — about 3½ to 4 hours on HIGH should be enough, though the meat will be slightly less tender.

Serving Suggestions

  • Serve over steamed white or jasmine rice for a classic combo.
  • Try with stir-fried vegetables or Asian noodles for a full meal.
  • Add a sprinkle of extra sesame seeds or chopped cilantro before serving.
  • Pair with a light cucumber salad or miso soup for balance.
  • Leftovers make amazing teriyaki steak bowls or wraps!
