These Garlic Herb Chicken Bites are juicy, golden-seared pieces of chicken cooked in a buttery garlic wine sauce, finished with fresh herbs and a squeeze of lemon. They’re quick, flavorful, and perfect for serving as an appetizer or main dish.

Ingredients

Seasoning Blend

  • ½ teaspoon each: onion powder, dried basil, dried oregano
  • ¼ teaspoon each: black pepper, paprika, mustard powder

Chicken & Sauce

  • 1–2 tablespoons olive oil
  • 1½ lbs boneless, skinless chicken breast
  • Salt to taste (I use up to 1¼ teaspoons)
  • ¾ cup dry white wine (see notes below)
  • ¾ cup chicken broth
  • ¼ teaspoon seasoned salt
  • 4 tablespoons salted butter
  • 4–5 cloves garlic, minced
  • 4 sprigs fresh thyme
  • 2 tablespoons fresh parsley, finely chopped
  • Fresh lemon slices, for serving

Instructions

  1. Prep Ingredients:
Combine all seasoning ingredients in a small bowl and set aside. Measure and prep all other ingredients before you begin cooking.
  2. Prepare the Chicken:
Cover chicken breasts with plastic wrap and gently pound both sides with a meat mallet to tenderize. Cut into 1-inch cubes and pat dry thoroughly with paper towels—this helps create a perfect sear. Sprinkle with salt and the seasoning mix, then toss to evenly coat.
  3. Sear the Chicken:
Heat olive oil in a large skillet over medium-high heat. Sear the chicken in batches for about 5 minutes total, turning to brown all sides. Remove the cooked chicken and set aside.
  4. Deglaze the Pan:
Turn off the heat and pour in the wine, chicken broth, and seasoned salt. Turn the heat back to medium and scrape the browned bits from the bottom of the pan with a silicone spatula. Simmer for 8–10 minutes, or until the liquid has reduced by half and the alcohol smell is gone.
  5. Build the Sauce:
Reduce heat to medium-low. Stir in the butter, garlic, and thyme sprigs. Let it simmer gently for 1–2 minutes to infuse the sauce.
  6. Finish and Serve:
Return the chicken and any accumulated juices to the pan. Add the chopped parsley and toss everything to coat. Let it warm through for another 2–3 minutes.
Finish with a squeeze of fresh lemon over the top. Serve immediately!

Why You’ll Love This Recipe

  • Quick and easy: Ready in under 30 minutes, start to finish
  • Big flavor: Garlic, wine, butter, and herbs come together in a bold, savory sauce
  • Versatile: Works as a hearty appetizer or satisfying main dish
  • Elegant but simple: Impressive enough for guests, easy enough for a weeknight

Tips

  • Dry the chicken thoroughly before searing for the best golden crust.
  • Don’t overcrowd the pan when searing—cook in batches for even browning.
  • Use fresh garlic and herbs for maximum flavor.
  • If wine isn’t your thing, see substitutions below.
  • For extra lemon flavor, zest a bit of the lemon before juicing it.

Variations and Substitutions

  • No wine? Substitute with more chicken broth and a splash of white wine vinegar or lemon juice.
  • Make it creamy: Add a splash of heavy cream or a spoonful of cream cheese to the sauce.
  • Swap herbs: Use rosemary or tarragon instead of thyme if desired.
  • Add veggies: Stir in spinach, mushrooms, or cherry tomatoes at the end.
  • Different protein: Try the same method with shrimp or diced pork tenderloin.

FAQs

Can I make this ahead of time?
Yes—cook the chicken and make the sauce separately, then combine and reheat gently when ready to serve.

What kind of wine should I use?
A dry white wine like Sauvignon Blanc, Pinot Grigio, or Chardonnay works best.

Can I use chicken thighs instead?
Absolutely! Boneless, skinless thighs will be just as delicious and even juicier.

Is this recipe kid-friendly?
Yes—the alcohol in the wine cooks off, leaving just the flavor behind.

Serving

  • Serve as bite-sized appetizers with toothpicks at parties
  • Plate over mashed potatoes, rice, or pasta for a comforting meal
  • Pair with roasted green beans, asparagus, or a crisp salad
  • Make it into wraps or stuff into pitas with veggies and sauce

Suggestions

  • Drizzle with extra lemon juice or top with grated Parmesan for a finishing touch
  • Add a splash of hot sauce or red pepper flakes for heat
  • Make a pan sauce reduction by doubling the wine and broth for extra richness
  • Great with crusty bread to soak up the sauce!
