Craft an easy and flavorful mini meatloaf recipe for a family-friendly dinner. Made with ground beef, fresh vegetables, cheddar cheese, and a tangy glaze, these individual loaves are perfectly portioned and packed with taste. Serve with classic sides like mashed potatoes or roasted vegetables for a complete and satisfying meal.

Ingredients

Meatloaf:

  • 1 tablespoon butter
  • ¼ cup yellow onion, diced
  • ¼ cup bell pepper, diced
  • 1 teaspoon minced garlic
  • 1 egg
  • ⅓ cup milk
  • 1 teaspoon yellow mustard
  • 1 teaspoon ketchup
  • 1 teaspoon BBQ sauce
  • ½ tablespoon Worcestershire sauce
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ⅓ cup crushed Ritz or Italian breadcrumbs
  • ½ cup cheddar cheese, shredded
  • 1 pound ground beef (85% lean)

Glaze:

  • ½ cup ketchup (plus extra for serving)
  • ½ cup BBQ sauce

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Sauté the Vegetables: Melt the butter in a small saucepan over medium heat. Add the diced onions and bell peppers, sautéing for 4 minutes. Add the minced garlic and cook for 1 more minute. Remove the mixture from the heat and let it cool.
  3. Combine Wet Ingredients: In a large mixing bowl, whisk together the egg, milk, mustard, ketchup, BBQ sauce, Worcestershire sauce, shredded cheese, salt, and pepper.
  4. Add Dry and Meat Ingredients: Stir in the crushed Ritz crackers, followed by the cooled vegetable mixture. Add the ground beef and gently mix until just combined. Avoid overworking the meat to keep it tender.
  5. Shape the Loaves: Divide the meat mixture into 4 equal portions. Shape each into a 5-inch loaf. Place the loaves on a parchment-lined baking sheet with raised edges to catch drippings. Mix the glaze ingredients and brush half of it over the loaves.
  6. Bake and Remove Grease: Bake for 25 minutes. Remove the baking sheet from the oven and carefully transfer the meatloaves to a new parchment-lined baking sheet to discard excess grease. Alternatively, use a plate to hold the meatloaves temporarily while replacing the parchment paper on the original sheet. (See Tips below for an alternate grease removal method.)
  7. Second Bake: Brush the remaining glaze over the meatloaves and return them to the oven. Bake for another 15 minutes or until the internal temperature reaches 160°F (71°C).
  8. Serve: Optionally, brush additional ketchup on top before serving. Pair with mashed potatoes, roasted green beans, roasted carrots, or garlic butter pasta for a complete meal.

Why You’ll Love This Recipe

  • Family-Friendly: Perfectly portioned mini loaves make it easy to serve and customize for everyone.
  • Rich Flavor: A combination of fresh vegetables, spices, and a tangy glaze ensures every bite is flavorful.
  • Comfort Food Classic: A traditional dish with a modern twist that’s perfect for weeknight dinners or special occasions.

Tips

  • Handle the Meat Gently: Overmixing can make the meatloaf dense and tough.
  • Alternative Grease Removal: Place the meatloaves on a wire rack set over a baking sheet to let the grease drip away while baking.
  • Glaze Customization: Adjust the glaze’s sweetness by using more ketchup or balancing with a tangy BBQ sauce.

Variations and Substitutions

  • Protein: Swap ground beef with ground turkey, chicken, or a plant-based alternative for a lighter option.
  • Vegetables: Add grated carrots or zucchini for extra moisture and nutrition.
  • Cheese: Try mozzarella or pepper jack instead of cheddar for a different flavor.
