Make these easy Philly Cheesesteak Sliders for the perfect party appetizer or family dinner. Tender thin-sliced steak, melted provolone cheese, caramelized onions, and peppers are layered on soft Hawaiian rolls and baked until hot and cheesy. This crowd-pleasing recipe is great for game day, potlucks, or weeknight meals, with simple ingredients and big flavor in every bite.

Ingredients

  • 2 lb. thinly sliced ribeye or sirloin
  • 1 tsp. Lawry’s Seasoned Salt
  • Freshly ground black pepper
  • 1–2 tsp. vegetable oil
  • ½ large yellow onion, diced small
  • ½ large green bell pepper, diced small
  • ½ large red bell pepper, diced small
  • Kosher salt, to taste
  • 12 King’s Hawaiian rolls
  • ½ cup mayonnaise
  • 3 cloves garlic, minced or pressed
  • 12–16 slices mild provolone cheese, thinly sliced
  • 3 Tbsp. melted butter
  • Pinch of garlic salt
  • Dash of Worcestershire sauce
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prepare the Beef:
    • Trim excess fat from the ribeye or sirloin.
    • Freeze for about 30 minutes to make slicing easier.
    • Thinly slice the beef against the grain (thin slices are key!).
    • Season with Lawry’s seasoned salt and freshly ground black pepper.
  2. Cook the Beef:
    • Heat 1 tsp. oil in a large skillet over medium-high heat.
    • Cook the beef in batches, browning each side for about 2 minutes.
    • Remove cooked beef with a slotted spoon and set aside. Avoid overcrowding the pan.
  3. Cook the Vegetables:
    • In the same pan, add the diced onion and peppers with a pinch of kosher salt.
    • Cook for about 7 minutes, stirring occasionally, until softened but not mushy.
  4. Prepare the Rolls:
    • Preheat oven to 350°F (175°C).
    • Without separating, slice the rolls horizontally with a serrated knife.
    • Place the bottom half of the rolls in a 9×13-inch baking dish or on a parchment-lined sheet pan.
  5. Make Garlic Mayo:
    • In a small bowl, whisk together mayonnaise and minced garlic.
    • Spread on both the top and bottom halves of the rolls.
  6. Assemble the Sliders:
    • Layer half of the provolone cheese slices over the bottom rolls.
    • Add the cooked beef evenly on top.
    • Spread the onion and pepper mixture evenly over the beef.
    • Add the remaining cheese slices on top.
    • Place the top half of the rolls over everything.
  7. Butter Topping:
    • Mix melted butter with garlic salt and Worcestershire sauce.
    • Brush over the tops of the rolls.
  8. Bake:
    • Cover with foil and bake for 10 minutes.
    • Remove foil and bake an additional 10 minutes, until hot and melty.
  9. Finish & Serve:
    • Brush with leftover butter mixture for shine.
    • Sprinkle with fresh parsley if desired.
    • Slice into individual sliders and serve warm.

Why You’ll Love This Recipe

These sliders are the perfect combination of tender beef, gooey cheese, and soft rolls with a golden buttery topping. They’re crowd-pleasing, easy to assemble, and ideal for game days, parties, or family dinners.

Tips

  • Freeze the beef briefly before slicing for ultra-thin cuts.
  • Don’t overcrowd the pan when cooking the meat—this keeps it tender and flavorful.
  • Use parchment paper for easy cleanup.
  • Let the sliders rest for 2–3 minutes before slicing to prevent cheese from spilling out.

Variations and Substitutions

  • Cheese Swap: Try mozzarella, white American, or cheddar instead of provolone.
  • Rolls Alternative: Brioche slider rolls or dinner rolls work too.
  • Veggie Boost: Add mushrooms for extra flavor.
  • Spicy Kick: Mix a little hot sauce into the mayo or add jalapeños.

FAQs

Can I make these ahead of time?
Yes—assemble the sliders up to 24 hours in advance, cover tightly with foil, and refrigerate. Bake just before serving.

Can I use ground beef instead of steak?
Yes, though traditional cheesesteak uses sliced steak. If using ground beef, cook until browned and season well.

Do they reheat well?
Yes. Reheat in a 300°F oven, covered with foil, until warmed through.

Serving Suggestions

  • Serve with fries, potato wedges, or onion rings for a classic pairing.
  • Add a side salad for a lighter option.
  • Perfect as finger food at parties or game-day gatherings.
  • Pair with a cold soda or a pitcher of iced tea.
