Learn how to make an easy and flavorful Salisbury Steak recipe with rich mushroom gravy. Perfect for family dinners, this comfort food pairs well with mashed potatoes or vegetables.

Ingredients

Salisbury Steak

  • 3 tablespoons olive oil, divided
  • 1/2 cup yellow onion, minced
  • 2 garlic cloves, minced
  • 1 large egg, whisked
  • 1/4 cup milk
  • 1 teaspoon yellow mustard
  • 1 teaspoon ketchup
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup Italian breadcrumbs (or substitute with Panko)
  • 1 lb. ground beef (80% lean)

Gravy

  • 1 tablespoon olive oil
  • 1/2 cup yellow onion, finely diced
  • 1 tablespoon unsalted butter
  • 8 oz. white button mushrooms, sliced
  • 2 1/2 cups beef broth
  • 1 beef bouillon cube
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 1/2 teaspoons Worcestershire sauce
  • 1/4 cup cold water
  • 3 tablespoons cornstarch

Instructions

Form and Sear the Steaks

  1. Heat 1 tablespoon olive oil in a skillet over medium heat. Sauté the minced onions and garlic for 5 minutes. Remove from heat and let cool slightly. (Optional: This step softens the onions and garlic for a smoother texture and flavor.)
  2. In a large bowl, whisk together the egg, milk, mustard, ketchup, Worcestershire sauce, oregano, salt, and pepper. Stir in the breadcrumbs to form a paste. Mix in the cooked onions and garlic.
  3. Add the ground beef to the bowl and gently mix with your hands until just combined. Avoid overmixing to keep the meat tender.
  4. Shape the mixture into 4 oval-shaped patties. Refrigerate for 15 minutes to help the patties hold their shape.
  5. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Sear the patties two at a time for 1 minute per side, then remove and set aside. The patties will not be fully cooked at this stage.

Prepare the Gravy

  1. In the same skillet, heat 1 tablespoon olive oil over medium heat. Sauté the diced onion for 5 minutes.
  2. Add the butter and mushrooms, cooking until golden brown, about 5 minutes.
  3. Pour in the beef broth, then stir in the beef bouillon cube, onion powder, garlic powder, and Worcestershire sauce.
  4. Bring the gravy to a boil. In a small bowl, mix the cornstarch with cold water until smooth. Slowly whisk the cornstarch mixture into the gravy a little at a time, stirring until it thickens to your desired consistency. Reduce the heat to medium.

Add the Steaks

  1. Return the Salisbury Steaks to the skillet, spooning the gravy over the top.
  2. Cover the skillet and cook for 10-15 minutes, or until the internal temperature of the patties reaches 160°F.
  3. Remove from heat and serve hot with mashed potatoes and roasted green beans for a classic comfort meal.
