Instructions

  1. Prepare the Sausage
    Heat 2 tablespoons of olive oil in a large pot over medium heat. Slice the sausage into ½-inch thick rounds and cook according to package instructions. Remove from the pot and set aside.
  2. Sauté Onions and Garlic
    Melt the butter in the same pot. Add the diced onions and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Deglaze the Pot and Cook Rice

  4. Add Bell Peppers

    Turn off the heat and let the pot sit, covered, for 10 minutes. This allows the rice to finish steaming and any stuck grains to loosen from the bottom.
  6. Combine Ingredients
    Return the pot to low heat. Stir in the cream of chicken soup, sour cream, milk, and shredded cheddar cheese. Mix until well combined.
