Crispy, cheesy, and loaded with flavor, these Sheet Pan Chicken Nachos are the ultimate crowd-pleaser! They’re piled high with shredded rotisserie chicken, beans, melted cheese, and all your favorite toppings for the perfect easy weeknight dinner or game-day snack.

Ingredients

For the Nachos:

  • 1 (12 oz) bag corn tortilla chips (use thick chips for best results)
  • 1 rotisserie chicken, shredded (~3–4 cups)
  • 1 Tbsp taco seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 16 oz shredded cheese (Monterey Jack, cheddar, or Colby — or a mix!)
  • 1 (15.5 oz) can pinto beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed

Topping Ideas:

  • Sour cream
  • Guacamole or diced avocado
  • Pickled jalapeños
  • Green onions
  • Diced tomatoes
  • Salsa or pico de gallo
  • Red onion slices
  • Black olives
  • Shredded lettuce
  • Fresh cilantro
  • Lime wedges
  • Hot sauce

Instructions

  1. Preheat the Oven
Set your oven to 350°F (175°C). Lightly spray a large sheet pan with nonstick cooking spray.
  2. Prepare the Chicken
Shred the rotisserie chicken and place it in a mixing bowl. Add the taco seasoning, salt, and pepper. Toss until evenly coated.
  3. Layer the Nachos
On the prepared sheet pan, start with a base layer of half the tortilla chips. Add half of the seasoned chicken, half of the pinto and black beans, and half of the shredded cheese.
  4. Repeat the Layers
Add another layer of the remaining chips, chicken, beans, and finish with the rest of the cheese on top.
  5. Bake
Bake in the preheated oven for about 10 minutes, or until the cheese is fully melted and bubbly.
  6. Add Toppings & Serve
Remove from the oven and immediately top with your favorite toppings — sour cream, guacamole, jalapeños, tomatoes, or anything you love! Serve warm and enjoy right off the pan for the ultimate sharing experience.

Why You’ll Love This Recipe

  • Quick & easy: Ready in just 20 minutes from start to finish.
  • Perfect for groups: Great for parties, family dinners, or game nights.
  • Customizable: Add your favorite toppings or swap ingredients to make it your own.
  • Satisfying: A complete, hearty meal made on one pan — minimal cleanup!

Tips

  • Use thick chips: Thin tortilla chips can get soggy or break easily under the toppings.
  • Pre-shred your cheese: Freshly shredded cheese melts better than pre-packaged shredded cheese.
  • Layer evenly: Make sure each chip gets some toppings — no naked chips!
  • Don’t overbake: The cheese should be melty, not dry or crispy.
  • Serve immediately: Nachos are best enjoyed hot and fresh out of the oven.

Variations and Substitutions

  • Protein swap: Try ground beef, shredded pork, or grilled shrimp instead of chicken.
  • Vegetarian version: Skip the chicken and double up on beans and veggies.
  • Spice it up: Add sliced jalapeños, chili flakes, or drizzle with hot sauce.
  • Different cheeses: Pepper Jack, queso fresco, or a Mexican cheese blend also work great.
  • Healthier twist: Use baked tortilla chips and low-fat cheese or Greek yogurt in place of sour cream.

FAQs

Can I make these nachos ahead of time?
It’s best to assemble and bake just before serving. If you want to prep ahead, keep the chicken, beans, and cheese ready in separate containers.

How can I reheat leftovers?
Place the nachos on a baking sheet and reheat at 350°F for 5–7 minutes. Avoid the microwave — it makes the chips soggy.

Can I make this recipe gluten-free?
Yes! Just use gluten-free tortilla chips and taco seasoning.

How do I prevent soggy nachos?
Bake the chips for 5 minutes before adding toppings to crisp them up first.

Serving

Serve these nachos straight from the pan for a fun, casual presentation. Add small bowls of toppings on the side so everyone can customize their portion. Perfect for movie nights, parties, or weekend dinners.

Suggestions

  • Pair with a refreshing drink like lime agua fresca or cold iced tea.
  • Turn it into a full meal by serving with a side of Mexican rice or a fresh salad.
  • For extra flair, drizzle nachos with sour cream or queso sauce just before serving.
