Ingredients

For the Cookies:

  • 1¼ cups granulated sugar
  • 1 Tbsp lemon zest (use more for a stronger lemon flavor)
  • ¾ cup unsalted butter, softened
  • 3 cups all-purpose flour, spooned and leveled

  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 large egg, room temperature
  • ½ cup sour cream, room temperature
  • 1 Tbsp freshly squeezed lemon juice
  • 1 tsp lemon extract
  • 1 tsp vanilla extract
  • 1 cup white chocolate chips (plus extra for topping)

For the Lemon Glaze (Optional):

  • ¼ cup granulated sugar
  • 2 Tbsp freshly squeezed lemon juice

Instructions

  1. Infuse the sugar with lemon zest
    In the bowl of a stand mixer, combine granulated sugar and lemon zest. Rub the mixture between your fingers to release the lemon oils and create aromatic lemon sugar.
  2. Cream the butter and sugar
    Add the softened butter to the lemon sugar. Beat on medium speed for 2–3 minutes, scraping down the sides as needed, until light and fluffy.
